Razor clams reward gentle handling and quick cooking:


  • Raw (very fresh, properly handled) – Thinly slice and serve as sashimi or crudo to highlight their sweetness.
  • Steam in the shell – Steam briefly with wine, garlic, and herbs until the shells open, then serve with the flavorful liquor.
  • Grill in the shell – Lay clams on a hot grill just until they open; finish with butter, lemon, and herbs.
  • Broil with herbs & breadcrumbs – Top opened clams with a light breadcrumb, herb, and butter mixture and broil until just golden.

As with other delicate clams, avoid overcooking—once the meat firms up and turns opaque, it’s ready.
