Signal Crayfish cook quickly—treat them like crawfish:


  • Boil – Classic style: boil in seasoned water with aromatics, then serve piled high with corn, potatoes, and other sides.
  • Chill & pick – Cool after cooking, then pick the tails (and claws, if desired) for use in salads, pastas, and rice dishes.
  • Pasta, risotto & grains – Fold tail meat and a little strained cooking liquid into simple butter, herb, and citrus sauces.
  • Soups & bisques – Use shells and bodies for stock, then add tail meat near the end so it just warms through.

As with other small crustaceans, don’t overcook—once the shells turn bright and the meat is opaque and firm, they’re done.
