Sustainability Consideration:
Because scungil comes mostly as bycatch in existing trap fisheries and is sold through a small traditional market, it remains a low-volume, niche fishery rather than a high-intensity target species. Scungil needs gentle precooking to tenderize, then can be finished in a range of classic preparations:
- Simmer first – Boil or gently simmer whole whelks until tender, then remove from the shell, trim, and slice.
- Marinated salads – Toss sliced meat with olive oil, lemon, garlic, herbs, and chile, then chill so flavors develop.
- Tomato sauces – Add to slow-simmered tomato, garlic, and wine sauces near the end so it warms through without over-tightening.
