Seafood Cooking Tips

Pacific Oysters are incredibly versatile, but they shine when you keep things simple:


  • Raw on the half shell – Shuck carefully, keep the liquor, and serve ice-cold with lemon, mignonette, or a light sauce.
  • Steam – Just until the shells open, with a splash of wine or broth and a few aromatics.
  • Grill or bake – Top with butter, herbs, breadcrumbs, or classic sauces, and cook briefly until just set.
  • Poach or fry – Gently poach shucked meats for chowders and stews, or bread and fry quickly for sandwiches and appetizers.

As with all oysters, avoid overcooking—the goal is warm and just set, not dried out.
