Sustainability Consideration:
Long Fin Squid is short-lived and fast-growing, traits that generally make it more resilient to fishing pressure when harvest is well managed. U.S. fisheries are overseen with quotas and seasonal controls, and landings are monitored closely. Monterey Fish Market focuses on regulated fisheries and well-handled product, paying attention to origin and catch method so squid remains a reliable, responsible option for both home cooks and professional kitchens.

Flavor & Texture:
- Flavor: Mild, slightly sweet, and clean, with gentle ocean savoriness and very little “fishiness”
- Texture: Tender yet pleasantly firm when cooked correctly; can toughen if overcooked or held too long at medium heat
It’s a good fit for guests who like subtle flavor and good bite.

Seafood Cooking Tips
Like most squid, Long Fin does best either very quick or low and slow, with quick being most common:
- Fry – Classic calamari: cut into rings or strips, lightly batter or bread, and fry just until golden.
- Sauté / stir-fry – Cook over high heat for 1–2 minutes with garlic, chile, and herbs; finish with lemon or wine.
- Grill – Score tubes, marinate briefly, and grill hot and fast; slice and serve with olive oil and herbs.
- Stews & pasta – Add near the end of cooking to tomato- or wine-based sauces so it just turns opaque and stays tender.
Avoid long cooking at medium heat; squid is best either hot and fast or fully tenderized in a slow braise.
