Kumamotos are best enjoyed raw to show off their subtlety:


  • Raw on the half shell – Serve ice-cold with lemon and a light mignonette; heavy sauces can overwhelm their delicacy.
  • Lightly dressed – A few drops of citrus, a touch of fresh herb, or a simple seasoned vinegar is plenty.
  • Very gentle heat (optional) – If warmed, keep it minimal—briefly kiss them under a broiler or on the grill with a little butter, just until the edges barely curl.

Because they’re small and prized for their raw character, Kumamotos are rarely used in chowders or heavy cooked dishes.
