  1. Purge & rinse – Rinse well and soak briefly in cold water to help remove sand.
  2. Clean – Open the shell, separate neck and body, and trim as needed.

Then:


  • Quick sauté – Slice and sauté in a hot pan with olive oil, garlic, and herbs; cook just until opaque.
  • Grill – Grill in the shell over medium-high heat until they just open, then finish with butter, lemon, and parsley.
  • Pan roast – Toss cleaned pieces into a hot pan with white wine, chile, and tomatoes for a simple, brothy dish
  • Fritters / light fry – Dip sliced meats in a light batter or breading and fry briefly until crisp outside and tender inside.

The key is speed: once razor clams turn opaque and firm up, they’re done—overcooking will turn them tough and rubbery.
