Cuttlefish works well with two basic approaches: very quick cooking, or slow, gentle braising:


  • Quick sear or grill – Cook scored tubes and tentacles over high heat for just a minute or two so they stay tender; finish with olive oil, lemon, and herbs.
  • Braise or stew – Simmer slowly in tomato, wine, or broth-based sauces until fully tender; ideal for rustic Mediterranean-style dishes.
  • Ink dishes – Use cuttlefish ink to color and flavor risottos, paellas, and pastas with a deep, savory sea character.

Avoid the “in-between” zone—cooking too long at medium heat can toughen the flesh. Either cook it hot and fast, or low and slow until it relaxes again.
