Atlantic Oyster

Crassostrea virginicus

Atlantic Oysters are classic East Coast oysters—briny and sweet with subtle cucumber and melon notes. They’re excellent on the half shell and also stand up beautifully to frying, stuffing, poaching, and hearty soups and stews.

Sustainability Consideration:

Like other oysters, Atlantic Oysters are filter feeders—they help improve water quality by removing plankton and fine particles as they grow. Well-run farms can have a relatively small footprint and can even support healthier estuaries. By contrast, some wild harvests that rely on dredging can stir up bottom sediments and disturb vegetation if not carefully managed.

Monterey Fish Market focuses on responsibly farmed oysters and well-managed wild fisheries, paying attention to harvest area and methods so Atlantic Oysters remain both a delicious and thoughtful choice.

Seafood Cooking Tips

Atlantic Oysters are versatile and take well to both raw and cooked preparations:

  • Raw on the half shell – Shuck carefully, keep the liquor, and serve ice-cold with lemon, mignonette, or light sauces.
  • Fry – Bread or batter shucked meats and fry quickly for po’ boys, platters, or appetizers.
  • Stuff and bake – Top larger oysters with seasoned crumbs or classic stuffings and bake just until set.
  • Poach, soups & stews – Gently poach shucked oysters and add near the end of cooking to chowders, stews, or creamy sauces so they stay tender.

As with all oysters, avoid overcooking—the goal is warm and just set, not rubbery.
