Sustainability Consideration:
Yellowtail Jack hasn’t yet been formally rated by major seafood watch programs, but the local fisheries that use handline and hook & line are generally gentle on habitat and light on fish populations. These more selective methods are the preferred choice when available.

Seafood Cooking Tips
Yellowtail Jack is versatile and handles both raw and cooked preparations beautifully:
- Serve raw – Sashimi, crudo, or poke with citrus, soy, or chile.
- Grill – Great as thick steaks or loins over medium-high heat; brush with oil and don’t overcook.
- Sauté / Pan-sear – Sear portions in a hot pan and finish with a bright sauce or vinaigrette.
- Quick-cure & marinate – Light salt cures or citrus-forward marinades highlight its richness.
- Olive-oil poach – Gently poach in warm olive oil for a silky, confit-style texture.
Because the flesh is rich and fatty, pull it from the heat while the center is still just slightly translucent for the best texture.
