Sustainability Consideration:
Yellowfin is fished in oceans around the globe that are regulated under many different governing bodies, so making the sustainable choice isn't without some effort. Please purchase tuna that was caught using troll, hook & line, or hand line. Tuna from the waters of the United States by longline is a better second choice. Avoid tuna caught by longline outside of US waters, and avoid purse seine captured tuna altogether.

Seafood Cooking Tips
Yellowfin is a true all-round tuna and works beautifully both raw and cooked:
- Serve raw – Sashimi, poke, crudo, or tartare.
- Sear – Quick, high-heat sear on the outside, leaving the center rare to medium-rare.
- Grill – Thick steaks over high heat; season simply and avoid overcooking.
- Sauté – Pan-sear medallions and finish with citrus, soy, or herb sauces.
- Confit – Slowly poach in olive oil for a luxurious “tuna in oil” style preparation.
For the best texture and moisture, pull Yellowfin from the heat while the center is still slightly translucent rather than cooking it all the way through.
