Winter Skate belongs to a broad skate complex where some species have been overfished while others have grown very abundant, depending on local conditions (for example, in parts of Chesapeake Bay).
Within U.S. management:
- U.S. wild-caught Winter Skate is not overfished and not subject to overfishing, and is managed as part of the Northeast Skate Complex with quotas, area closures, and gear restrictions.
- Bottom trawls can affect seafloor habitats; spatial closures and restrictions are in place to reduce these impacts.
When possible, choosing gillnet-caught Winter Skate from regulated U.S. fisheries supports more selective gear and habitat protections.

Seafood Cooking Tips
Skate wings respond best to gentle, moist cooking or quick pan-searing:
- Sauté – Dredge lightly in flour and sauté in butter or olive oil until just cooked through; finish with lemon, capers, or brown butter.
- Poach – Gently poach in court-bouillon, fish stock, or milk for a very delicate result.
- Pan-roast – Sear in a hot pan, then finish in the oven with herbs and aromatics.
- Braise in sauce – Simmer briefly in a light cream, wine, or tomato-based sauce; add the wings near the end so they stay tender.
As with other delicate white fish, pull skate from the heat as soon as the flesh turns opaque and pulls away from the cartilage easily.
