White Sea Bass is managed with size limits, gear restrictions, and seasonal controls designed to protect spawning fish and rebuild stocks off California and Baja. Choosing hook-and-line–caught fish from regulated fisheries helps support those efforts and reduces bycatch compared with less-selective gear.

Seafood Cooking Tips

White Sea Bass is a true all-rounder and responds beautifully to a range of techniques:


  • Sauté / pan-sear – Brown portions in a hot pan and finish with butter, citrus, herbs, or capers.
  • Grill – Great as thick steaks or fillets over medium-high heat; oil the surface and don’t overcook.
  • Bake / roast – Roast with olive oil, garlic, and vegetables, or in a simple wine-and-herb bath.
  • Serve raw – When extremely fresh, slice for crudo, sashimi, or poke.
  • Quick salt cure & marinade – Short cures with salt, sugar, and aromatics enhance flavor and firm the flesh slightly.

As with other lean-firm white fish, pull it from the heat as soon as the center turns opaque and flakes with gentle pressure so it stays juicy.
