A bright red Pacific rockfish often sold as “red snapper” on the West Coast, Vermilion Rockfish has a mild, sweet, slightly rich flavor and medium-firm, flaky flesh. It’s versatile and forgiving—great for grilling, roasting, sautéing, tacos, and chowders.

Vermilion Rockfish is part of the West Coast rockfish/groundfish complex, which has undergone a major recovery under strict management:

  • Gear rules and bycatch controls

Choosing hook-and-line or trap-caught fish when available supports more selective, lower-impact gear within that managed system.

Seafood Cooking Tips

Vermilion Rockfish is a true all-purpose white fish and very forgiving:


  • Sauté / pan-sear – Portion fillets, sear in a hot pan with butter or olive oil, and finish with lemon, herbs, or a light pan sauce.
  • Grill – Great for the grill: oil well, season, and cook over medium-high heat until just opaque. Works as fillets or whole, scored fish.
  • Roast / bake – Roast with olive oil, garlic, and vegetables, or bake in a shallow dish with white wine, tomatoes, and herbs.
  • Tacos & sandwiches – Its firm flakes and gentle richness make excellent fillings for fish tacos or sandwiches.
  • Soups & stews – Holds together nicely in brothy preparations and chowders without falling apart.

As with other lean, firm white fish, pull Vermilion Rockfish from the heat as soon as the flesh turns opaque and flakes easily with gentle pressure so it stays juicy rather than drying out.
