Seafood Cooking Tips
Tile Fish’s firm texture and sweet flavor stand up well to both simple and more assertive preparations:
- Sauté – Sear portions in a hot pan with butter or olive oil; finish with lemon, herbs, or a light pan sauce.
- Bake / roast – Roast fillets or thick portions with olive oil, garlic, and vegetables, or in a white-wine and herb bath.
- Grill – Firm fillets or steaks can be grilled over medium-high heat; oil well and cook just until the center turns opaque.
- Braise – Gently cook in tomato, coconut milk, or broth-based sauces; add the fish near the end so it doesn’t overcook.
As with other lean, firm white fish, pull Tile Fish from the heat as soon as the flesh turns opaque and flakes easily with gentle pressure so it stays moist and tender.
