Tautoga onitis (Blackfish)

An East Coast wrasse better known as “blackfish,” Tautog has firm, very white meat with mild, sweet, almost shellfish-like flavor. It’s a favorite table fish for chowders, pan-searing, and roasting—especially where people know how to fish it from wrecks and rock piles.

Sustainability Consideration:

Tautog is slow-growing and long-lived, and stocks along parts of the coast have been over-fished, which makes how it’s caught especially important.


Monterey Fish recommends:


  • Favoring trap-caught or hook-and-line fish, which are more selective and gentler on habitat than trawl gear.
  • Being mindful that high demand and slow rebuilding mean this is not an “everyday” fish in many regions, even if it appears on menus.

  • Flavor: Mild, sweet, and delicately shellfish-like, thanks to a diet heavy in crabs, clams, and mussels.
  • Texture: Firm, flaky white flesh that holds together in chowders, stews, and on the grill without falling apart.

It’s often compared to a cross between cod and grouper, with a little extra richness.

Seafood Cooking Tips

Tautog’s firm texture and sweet flavor make it great for simple, confident cooking:


  • Sauté / pan-sear – Portion fillets, sear in a hot pan with butter or olive oil, and finish with lemon, herbs, or a light pan sauce.
  • Bake / roast – Roast fillets or whole fish with olive oil, garlic, and vegetables, or bake in a shallow dish with white wine and herbs.
  • Chowder & stews – The firm flesh holds together in broth, so it’s excellent in New England-style chowders or tomato-based stews.
  • Grill – Thicker portions can be grilled over medium-high heat; oil well and cook just until the center turns opaque.

As with other lean, firm white fish, pull Tautog from the heat as soon as the flesh turns opaque and flakes easily with gentle pressure so it stays moist instead of drying out.
