Sustainability Consideration:
Steelhead in these rivers are bred and reared by the tribes who steward the watershed. Young fish are released to live out a natural ocean-going life, then return to their home rivers to spawn, where they’re harvested with gillnets and their eggs and milt collected to start the cycle again.
In this case, the egg skeins (eggs in their sack membranes) are carefully harvested and sold as roe, making full use of the fish.

Flavor & Texture:
Fresh, bright, and clean with crunchy eggs and briny ocean flavor—distinct, but less intense than some smaller, more strongly flavored roes.

Seafood Cooking Tips
Steelhead Trout Roe is best enjoyed raw or lightly cured:
- Salt-cure – Lightly cure in salt (and optional sugar) and chill before serving.
- Serve simply – Spoon over blini, toast points, rice, or soft-scrambled eggs.
- Garnish – Use as a finishing touch for crudo, sashimi, or canapés.
- Pairings – Think crème fraîche, cultured butter, chives, lemon, and neutral-tasting bases that let the roe shine.
Keep cold, handle gently, and serve in small, chilled portions to preserve texture and brightness.
