These fisheries trawl primarily on sandy and muddy bottoms, habitats that tend to experience minimal lasting environmental damage when effort is carefully managed. Starry Flounder works best with straightforward, moderately high-heat methods that develop color without drying it out:
- Sauté – Lightly flour fillets and sauté in butter or oil until golden; finish with lemon, herbs, or a simple pan sauce.
- Pan-fry – Shallow-fry breaded or lightly battered fillets for a crisp exterior and moist interior.
Because the fillets are relatively thin, pull them from the heat as soon as they turn opaque and flake easily with gentle pressure so they stay moist.
