Spiny Dogfish is versatile and behaves much like other firm white “steak” fish:


  • Fry – Classic choice for fish and chips in the UK: batter or bread and fry until crisp.
  • Grill – Great as thicker portions over medium-high heat.
  • Bake / Roast – Roast with olive oil, herbs, and vegetables.
  • Stew – Add chunks to robust stews or curries; the firm flesh holds together.
  • Pan-sear / Sauté – Sear quickly in a hot pan and finish with citrus, butter, or a light sauce.

As with other lean white fish, avoid overcooking—pull it from the heat as soon as the flesh turns opaque and flakes easily with gentle pressure.
