Silver Dory works beautifully in elegant, sauce-driven dishes:
- Sauté – Pan-sear fillets and finish with butter, wine, or citrus.
- Braise – Gently braise in a flavorful broth or stew so the flesh stays moist and tender.
- Grill – Grill thicker portions over medium heat, taking care not to overcook.
- Bake in gratin – Layer in a gratin with cream, stock, or vegetables for a rich, comforting presentation.
As with other premium white fish, pull it from the heat as soon as the flesh turns opaque and flakes easily with gentle pressure.
