Seafood Cooking Tips

Because Shad is oily and richly flavored, it stands up beautifully to assertive seasonings and smoke:


  • Grill – Fillets or split fish over medium heat; brush with oil or marinade and cook just until the flesh flakes.
  • Sauté / pan-fry – Dredge lightly in flour or cornmeal and cook until crisp outside and just done inside.
  • Broil – Broil fillets with lemon, herbs, or mustard-based toppings.
  • Smoke – Shad’s fat content makes it excellent for hot smoking; serve simply with bread, potatoes, or greens.
  • Deep- or shallow-fry – Small portions take well to frying and remain juicy.

As with other rich, oily fish, avoid overcooking—pull it from the heat as soon as it flakes easily so it stays moist and flavorful.
