Scorpion Fish

Scorpaena guttata (Sculpin)

A small, bottom-dwelling scorpionfish from Baja California and the Sea of Cortez, Scorpion Fish has mild, sweet flesh and a firm, juicy texture—but it must be handled and cleaned with care due to its venomous spines and toxic internal organs.

Sustainability Consideration:

Scorpion Fish is generally taken incidentally or in small, focused hook-and-line fisheries, and it is not heavily targeted compared with many other species. That periodic, low-intensity pressure helps limit overall fishing impact, but availability is naturally limited.

As with other scorpionfishes, the species has venomous spines, so careful handling at the dock and in the kitchen is essential.

Flavor & Texture:

Despite its fierce appearance, the meat itself is delicate and approachable—similar to other high-quality white fish once properly cleaned.

  • Flavor: Mild, sweet, and clean
  • Texture: Firm, juicy flesh that holds up well to moist cooking methods

Seafood Cooking Tips

Important: Leave the cleaning and trimming of Scorpion Fish to experienced fishmongers due to the combination of venomous spines and toxic internal organs. Work only with fully dressed fish.

Once prepped, Scorpion Fish lends itself to comforting, flavorful dishes:

  • Braise – Gently cook pieces in tomato, wine, or aromatic broth until just tender.
  • Stew – Add to fish stews and soups near the end of cooking so the flesh stays moist and intact.
  • Sauté – Lightly flour or simply season and sauté in olive oil or butter, finishing with lemon and herbs.

Because the flesh is firm but juicy, it stands up well to assertive flavors—garlic, chiles, fennel, tomatoes, and olives are all natural partners—so long as it isn’t overcooked.
