Sustainability Consideration:

Petrale Sole is trawled on sandy or muddy ocean bottoms, areas that tend to experience little or no lasting damage to ecosystems when these fisheries are carefully managed.

Seafood Cooking Tips

Because Petrale is lean and delicate, the key is gentle handling and not overcooking:


  • Cook on the bone – Roast or pan-roast whole or bone-in for extra juiciness and flavor.
  • Sauté / pan-sear – Lightly flour fillets and sauté in butter or olive oil; finish with lemon, capers, herbs, or a brown-butter pan sauce.
  • Grill – Grill whole or as thicker portions over medium heat, well-oiled and just until the flesh turns opaque.
  • Bake – Bake in a shallow dish with white wine, herbs, and a little butter until just cooked through.

As with other flatfish, pull Petrale Sole from the heat as soon as it turns opaque and flakes easily with gentle pressure so it stays moist and silky.
