  • Grill – Excellent as thick fillets or steaks over medium-high heat.

  • Bake / Roast – Roast with olive oil, garlic, and seasonal vegetables or breadcrumbs.

Because the texture is firm and dense, it’s a natural fit anywhere you’d normally use a “steak” fish—just be sure not to overcook so it stays juicy.
