Grey Sole is primarily a trawl-caught species, but the small-boat jig fishery represents a more selective, lower-impact way to harvest this fish. Supporting these smaller jig boats helps reward careful fishing and diversify how the resource is used.

Seafood Cooking Tips
Grey Sole’s firm but delicate fillets are best with simple, controlled heat:
- Sauté – Lightly flour fillets and sauté in butter or oil; finish with lemon, capers, herbs, or brown butter.
- Bake – Bake in a shallow dish with white wine, herbs, and a little butter just until the flesh turns opaque
- Roast – Roast whole or as fillets with olive oil, garlic, and vegetables for a simple, flavorful pan roast.
Because the fillets are thin, pull them from the heat as soon as they turn opaque and flake easily with gentle pressure so they stay moist and silky.
