Golden Leopard Grouper

A color variant of Leopard Grouper from Baja and the Sea of Cortez, Golden Leopard Grouper shares the same sweet, mildly rich flavor and firm, dense, moist texture—excellent for simple, high-heat cooking and “steak-style” plates.

NOTE* Fewer than 1 percent of Leopard Groupers will transform into this golden color. Once a typical brown spotted leopard grouper is around ten inches in size, in this minute number of fish a genetic marker in the DNA will be triggered, turning the fish this golden color. Nothing but the color in this fish changes; this and its brown sibling are genetically and taxonomically identical. Pretty amazing, and coincidentally, this is the first one we've seen at Monterey Fish.

Sustainability Consideration:
Like other groupers, Golden Leopard Grouper is slow to reproduce and can be vulnerable to overfishing. Ongoing restrictions in the United States and Mexico are helping rebuild stocks, but thoughtful sourcing and avoiding waste remain important.

Flavor & Texture:
Sweet and mildly rich with a firm, dense, and moist texture. It behaves much like other premium groupers—ideal when you want a substantial white fish that stands up to bold flavors and high heat.

Seafood Cooking Tips
Golden Leopard Grouper is highly versatile and works anywhere you’d normally use a meaty white fish or “steak” fish:
- Grill – Great as thick fillets or steaks over medium-high heat, brushed with oil and seasoned simply.
- Sauté – Pan-sear portions and finish with citrus, capers, herbs, or a pan sauce.
- Bake / Roast – Roast with olive oil, garlic, and vegetables or breadcrumbs until just opaque.
As with other groupers, avoid overcooking—pull it from the heat as soon as the flesh turns opaque and flakes with gentle pressure so it stays juicy.
