Fluke is part of a tightly managed Atlantic groundfish complex, with:

Stocks have been closely watched for decades, and management continues to adjust as new data comes in. As with other groundfish, more selective methods (like gillnet and hook & line) tend to be easier on habitat and bycatch than broad bottom trawls.

Seafood Cooking Tips
Because Fluke is lean and delicate, the key is gentle heat and not overcooking:
- Sashimi / crudo (very fresh) – Thinly slice and dress lightly with citrus, good oil, and salt.
- Sauté / pan-sear – Quickly sear in a hot pan with butter or olive oil; finish with lemon, herbs, or a light pan sauce.
- Poach – Gently poach in court-bouillon, stock, or olive oil for ultra-tender flesh.
- Bake / roast – Roast fillets or whole fish with white wine, herbs, and aromatics just until the flesh flakes.
- Steam – Steam with ginger, scallions, soy, or other aromatic seasonings for a clean, delicate dish.
Pull Fluke from the heat as soon as the flesh turns opaque and flakes easily with gentle pressure—its delicacy is part of the appeal, and it dries out if cooked hard all the way through.
