Seafood Cooking Tips
Because European Dover Sole is lean and delicate, it’s all about gentle handling and not overcooking:
- Meunière-style – The classic: lightly floured, pan-seared in butter, and finished with brown butter, lemon, and parsley.
- Sauté / pan-fry – Quick sauté in butter or olive oil; great with capers, herbs, or a simple white-wine pan sauce.
- Bake – Lay fillets or whole fish in a shallow dish with white wine, herbs, and a little butter; bake just until the flesh turns opaque.
- Steam – Steam with ginger, scallions, or other aromatics for an ultra-light preparation.
- Roll or stuff – Thin fillets can be rolled around light fillings and baked gently in broth or wine.
Pull the fish from the heat as soon as it turns opaque and flakes easily with gentle pressure—overcooking will dry out these thin, delicate fillets quickly.
