Seafood Cooking Tips
Because Dab Flounder is thin and delicate, cook it quickly and avoid high, prolonged heat:
- Sauté – Lightly flour fillets and sauté in butter or oil; finish with lemon, herbs, or a simple pan sauce.
- Pan-fry – Shallow-fry until just golden and crisp outside, keeping the interior moist.
- Poach – Gently poach in court-bouillon, fish stock, or white wine until just opaque and flaky.
Pull Dab Flounder from the heat as soon as the flesh turns opaque and flakes easily with gentle pressure—its fine texture is best when not overcooked.
