Sustainability Consideration:

Hook & line is the preferred method for California Halibut. The fish is also trawled over sandy bottoms, which generally leaves relatively little impact on seafloor habitat compared with rocky-bottom trawling.

Seafood Cooking Tips

California Halibut is lean, so the key is not to overcook—it can dry out if left on the heat too long.


  • Serve raw – As crudo, sashimi, or ceviche when extremely fresh.
  • Broil – Brush with oil or butter, season simply, and broil just until opaque.
  • Sauté – Lightly flour or simply salt and sear in a hot pan, finishing with lemon and herbs.
  • Steam – Gently steam with aromatics for a very moist, delicate result.

Pull the fish from the heat as soon as it turns opaque and flakes easily with gentle pressure.
