Avoid trawl-caught Atlantic Pollock when possible. U.S. stocks have rebuilt and are now considered well-managed, with hook-and-line and gillnet-caught fish being the best choices.

Seafood Cooking Tips
Atlantic Pollock is a flexible, all-purpose white fish:
- Bake – Roast with olive oil, herbs, and breadcrumbs or vegetables.
- Broil – Brush with oil or butter and broil until just opaque and lightly browned.
- Fry – Great battered or breaded for fish and chips, sandwiches, or tacos.
- Simmer – Add chunks to soups, chowders, or stews; the firm flakes hold up well.
- Salt – Can be lightly salted or used in salted-fish style preparations.
As with other white fish, avoid overcooking—pull it off the heat when the flesh turns opaque and flakes easily with gentle pressure.
