Seafood Cooking Tips

Best cooked whole  – Have the fish cleaned, pat very dry, and make a few shallow scores in the skin.


Season simply  – Salt, pepper, olive oil, plus lemon and herbs if you like. The fish is naturally rich.


Easy methods:

  • Pan-fry: Medium-high heat, a thin layer of oil, ~3–4 minutes per side until skin is crisp and flesh just flakes.
  • Roast/Broil: 425°F / broil, 8–12 minutes depending on size, with a little oil and lemon.
  • Grill: Use a fish basket or well-oiled grate, 3–4 minutes per side.

Avoid overcooking—these small fish go from perfect to dry quickly.
