Arctic Char is versatile and works beautifully with many salmon-style preparations:


  • Pan-sear – Cook skin-side down until crisp, then finish just to medium for a silky texture.
  • Roast – Roast fillets or whole sides with olive oil, citrus, and herbs.
  • Grill – Great on the grill with a basket or well-oiled grates; don’t overcook.
  • Smoke – Lightly cure and hot-smoke for rich, velvety results.
  • Serve raw – Excellent for crudo, sashimi, or gravlax-style cures when extremely fresh.

Because of its natural fat content, Char stays moist if you pull it from the heat while the center is still slightly translucent.
